In my opinion (and my opinion only, its mine and i see no reason to let you share it, i posted before you so enjoy the taste of some other cheese) smoked cheddar is the tastiest cheese. But all cheese in my eyes should be well and truly matured to bring out the full flavour otherwise you might as well go and eat some wood.

mature chedder is the best but wenslydale with cranberries is also bloody gorgeous!!
